My timing belt wants to run down the engine side of the cams. I've looked it all over thoroughly and have yet to find a reason why it won't run down the center of them. I have replaced the timing belt and some pulleys and have gotten the same problem. It doesn't seem to be causing problems, but I'd really like to know what it is.

check the pulleys that you replaced and make sure they are lined up even with the cam gears, if one of them is in or out further than the cam gears it would make sense to me that it would cause the timming belt to "track" off center of the cams a little. also make sure the tensioner is strait and tight and not bent any at the mounting bracket.
