What makes you think that amp won't power those subs? First off, any amp will power any sub, it's just a matter of how efficiently and how much power. Those Infinity subs, I used to have those and I had an amp smaller than that and they still hit real good. Best advice I can give you is to hook up your Pioneer amp and if you don't like it then you can go out and get a new amp.
 
You will need to use the line out convertor. It's simple to hook up, however I do recommend upgrading the head unit to aftermarket seeing as that's a lot simpler. But anyway, here's what you do:

There are five wires on the line out converter (usually 2 gray, 2 white, and one black)

That black is a ground, splice it in with the factory ground in the radio harness.

Now the other four wires are to be spliced into your speakers. It really doesn't matter which speakers you use, just make sure you use the same ones.

Solid gray wire hooks up to the negative speaker wire of the rear left speaker.

Gray with line wire hooks up to the positive speaker wire of the rear left speaker.

Solid white wire hooks up to the negative speaker wire of the rear right speaker.

White with line wire hooks up to the positive speaker wire of the rear right speaker.

The colors may differ slightly and the packaging might reverse the set up (white to the left speakers, gray to the right speakers) but as long as they are the same, you should be alright). Then, plug the RCA's into the RCA outputs and run them back to the Pioneer amp. You are all set then. But again, by upgrading your head unit, you will be providing a cleaner and better signal through the RCAs with an aftermarket HU than with a stock HU using a line out convertor.

Yeah that's probably easier...you can tap that convertor anywhere into the speaker wire, I just figured by the head unit because it was easier to hide the convertor behind the head unit instead of trying to force it to fit behind the speaker or behind the rear panels.
